Zucchini Noodles with Pesto Shrimp
Spiralized zucchini, garlicky shrimp and fresh pesto make a light noodle bowl that is ready in under 30 minutes.
Ingredients
- 4 medium zucchini, spiralized
- 1 shrimp, peeled and deveined (1 lb)
- 2 tbsp olive oil
- 3 garlic cloves, minced
- ½ cup basil pesto
- 1 cup cherry tomatoes, halved
- ¼ cup grated parmesan cheese
- ½ tsp kosher salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes
Steps
- Pat the shrimp dry and season with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Cook the shrimp 2 minutes per side until pink, then set aside.
- Add the garlic to the same skillet and cook 30 seconds until fragrant.
- Add the zucchini noodles and cherry tomatoes and toss 2-3 minutes, just until the noodles soften slightly.
- Remove from the heat, stir in the pesto and the shrimp, and toss to coat.
- Serve topped with parmesan and red pepper flakes.
Serve with: extra parmesan and a wedge of lemon.
Do not overcook the zucchini noodles: they go from tender to watery in about a minute, so pull the pan off the heat while they still have bite.
