Chicken Parmesan
Crisp breaded chicken cutlets, layered with marinara and melted mozzarella — crunchy outside, juicy inside, and best straight from the oven.
Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lb total), pounded to 0.5 inch thick
- 1 tsp kosher salt
- ½ tsp black pepper
- ½ cup all-purpose flour
- 2 eggs, beaten
- 1 cup Italian-seasoned breadcrumbs
- ½ cup grated Parmesan cheese, divided
- ¼ cup olive oil, for frying
- 1½ cup marinara sauce
- 1½ cup shredded low-moisture mozzarella
- 1 tsp dried oregano
Steps
- Heat the oven to 425°F. Season the chicken with salt and pepper.
- Set up three bowls: flour, beaten eggs, and breadcrumbs mixed with half the Parmesan.
- Dredge each cutlet in flour, then egg, then breadcrumbs, pressing to coat.
- Fry in olive oil in a large oven-safe skillet over medium-high heat, 3-4 minutes per side, until golden. Work in batches if needed.
- Spoon marinara over each cutlet, top with mozzarella, remaining Parmesan and oregano.
- Bake 10-12 minutes, until the cheese is melted and bubbling and the chicken reads 165°F. Rest 5 minutes before serving.
Serve with: spaghetti and marinara, a green salad and garlic bread.
Keep the sauce on top of the chicken, not under it — sauce underneath steams the crust soggy.
