Classic Meatloaf
A tender, well-seasoned meatloaf with a sweet-tangy tomato glaze — the weeknight classic that makes excellent sandwiches the next day.
Ingredients
- 2 ground beef (2 lb), 80/20
- 1 cup plain breadcrumbs
- ½ cup milk
- 2 eggs, beaten
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp Worcestershire sauce
- 1½ tsp kosher salt
- ½ tsp black pepper
- ¾ cup ketchup, divided
- 1 tbsp brown sugar
- 1 tsp apple cider vinegar
Steps
- Heat the oven to 375°F. Line a sheet pan with foil or parchment.
- Soak the breadcrumbs in the milk for 5 minutes.
- Mix the beef, soaked breadcrumbs, eggs, onion, garlic, Worcestershire sauce, salt, pepper and 0.25 cup of the ketchup — just until combined. Do not overmix.
- Shape into a loaf about 9 inches long on the prepared pan.
- Stir the remaining 0.5 cup ketchup with the brown sugar and vinegar and spread it over the top.
- Bake 55-65 minutes, until the center reads 160°F.
- Rest 10 minutes before slicing so it holds together.
Serve with: mashed potatoes, brown gravy and buttered peas or green beans.
Overmixing is what makes meatloaf dense: mix only until the ingredients disappear, then stop.
